Sweetened Condensed Deception

'Tis the season for iced coffee. I have a batch of cold brew going at the moment-- my first in years. Cold coffee was a must when I lived in Downtown Los Angeles. Sometimes I would cold-brew, sometimes I'd use a phin for Vietnamese-style coffee. Always, there would be condensed milk.

When I was in Cambodia in 2013, I noticed a strange thing: it was fairly difficult to find canned sweetened condensed milk that was actually just milk and sugar. In most markets, the "milk" I found all contained palm oil. I've noticed that a lot of markets now carry cans of "sweetened condensed creamer" which are made with nonfat milk, whey powder, and palm oil. One brand has a cow on the label and states that it's organic. Well.

Not only are there various ethical issues with palm oil, it also turns the milk a strange color and consistency. The "creamer" is shinier, thinner, more translucent than real sweetened condensed milk. And it just doesn't taste as good.

So, make sure you read labels. Even products labeled "milk" might contain palm oil.

Thankfully, the brand whose label I find most charming, Longevity Brand, still sticks to the plain old milk and sugar. I love that hermit. And, I assumed that they're owned by Nestle by now, but a quick Wikipedia search revealed that they've actually been owned by a cooperative called Friesland Campina since 1975. Colonialism aside, at least it's a co-op?

Layers and layers of money money money. Now I'm wondering what other Southeast Asian businesses fell to western companies who continue to capitalize (ever-increasingly, as well) on the branding.

When You Can't Have Coffee In The Morning // Spice Appreciation

A couple of months ago, I went to see a homeopath and he prescribed a remedy for me during which, to my horror, I had to avoid coffee.

My first thoughts: This is wrong. Terrible. Inhumane. Many synonyms for those words. But not really. But kinda.

I love coffee. Nothing excessive (anymore). My morning cuppa. Setting the water to boil, grinding the beans, choosing one of my handful of "favorite" mugs, stirring together the grounds and hot water with a chopstick, wrapping up the french press with a tea towel to hold in heat, the waiting, the gentle pushing down of the screen, then stirring in a spoonful of condensed milk or half and half and brown sugar... the body of the Trader Joe's Sumatra roast I use, the grittiness of the coffee (since I like to grind it a bit finer than is usual for a French press), the steamy aroma of it.

I haven't made my morning cuppa since that first visit back in March. How did I cope?

Chicory is Essential, Apparently

I had been making Vietnamese-style coffee with a dark roast from Trader Joe's, and while it was good, there was just something missing. It didn't taste quite right: it didn't have the same mouthfeel or color as the coffee I had and loved in Cambodia and in Vietnamese restaurants here. Yesterday I decided to pick up a can of Cafe du Monde Coffee with Chicory, and, lo-and-behold, this morning's brew was exactly right.

The process of making coffee this way is worth it. I love watching the condensed milk swirl up into the coffee from the bottom of the cup. It reminds me of mornings in Cambodia and late nights in pho restaurants.
